Grated Tuna Bottarga Sarda Affumicati 70 g
Tuna bottarga is obtained by salting and drying tuna roe. For compliance and structure (compared to Mullet roe, it contains more blood) tuna roe needs more special treatments, and aging takes quite long time (3-4 months). We mainly use roe of tuna caught in the Mediterranean sea (Yellowfin Tuna), because the particular bait of this sea gives a characteristic flavor to the roe, making it superior compared to the roe of the fish caught in the ocean.
