“Caseificio Piras” Greviera from Ozieri
Greviera is semi-cured cheese, known for its intense aromas and characteristic holes. The milk used for its production comes from extensive husbandry of Logudoro. Imported in the mid-1800 from Switzerland, along with the Bruno-Alpina breed, its production was favored by the arrival of the cheesemakers from Veneto who taught the Gruyere production techniques. Despite a very consistent production until the ’50s, it was almost lost, and after considerable effort, recovered from oblivion, until it has become part of the regional list of typical products and of the Slow Food Cheese of Italy. Greviera is registered in ARS ALIMENTARIA, the website of the Ministry of Health that certifies identity, quality and food safety.
Excellent as an appetizer or to complete a healthy, balanced diet, it perfectly matches with Spianata of Ozieri (typical bread) and Vermentino wine.
Ingredients: cow’s milk, calf rennet and salt.
