“Caseificio Piras” Aged Pecorino

Finely grainy hard sheep's milk cheese with a strong, intense and at the same time soft taste. It is produced following the traditional processes and aged for at least 12 months. Perfect as a table cheese, as well as grated, in thin slithers or used as an ingredient for pasta dishes, meat carpaccio and vegetables. It matches with fruit, jam and honey, as well as with still or sparkling white wines, as an aperitif, and with mature red wines after a meal. The whole wheel is about 10 kg. It is characterized for being low in lactose (long aging) and high in biological value proteins (more digestible than milk), calcium and phosphorus, vitamin B2 and pro-vitamin A.

Ingredients: sheep's milk, rennet, lactic ferments, salt. Non-edible rind. 0.700 g slice approx.
